My #UltimateSandwich – Sweet with Heat Grilled Chicken Sandwich!
Everyone has their favorite small appliance in their kitchen – maybe it is the kettle for making a perfect cup of tea, or your electric mixer for all of your home baking… Mine? Well mine is the toaster oven – One little appliance that does so many things. My love affair with toaster ovens started when I was in University – it was a great way for me to cook for 1, and didn’t take up a lot of space.
So when I was selected along with 19 other fabulous Canadian bloggers to try out the Black & Decker Convection Countertop Oven and to create The Ultimate Sandwich I was ecstatic! There are so many great features to the Black & Decker Convection Countertop Oven I will highlight a few:
- Of course it toasts – but it toasts evenly, the hot air circulates faster for even cooking across the whole oven. No more having to flip pieces of toast to ensure they are toasted evenly
- You can bake – This oven includes a 60 minute timer, and anything you could make in your regular oven you can make in this one (including cookies which I just made tonight!)
- Love the Broil feature to melt cheese on well… everything (because really, who doesn’t love cheese?)
- Perfect size for making snacks (think nachos or mini pizzas)
- Very quiet, you cannot hear the fan at all
When we were having our heat wave in July and the thought of turning on the oven made us sweat even more, we used the Black & Decker Convection Oven to bake one of A.C. all time favorite meals – sweet potato fries.
For my Ultimate Sandwich I took my inspiration from “Sweet with Heat”
A tasty grilled chicken sandwich with roasted red peppers and caramelized onions with a spicy aioli to give it some kick

Ingredients
1 Ciabatta loaf
1 Large Onion, Caramelized
1 Red Pepper, Roasted – you can make these yourself, or buy them
2 Chicken Breasts Grilled and sliced (can also use leftovers!)
Cheese (optional, but who doesn’t love cheese. I used a Mild Cheddar)
Lettuce
Spicy Aioli
1/2 cup Mayonnaise
1/2 cup Sour Cream
3 tbps PC Chipotle Hot Sauce
2 tbsp Lime Juice
1 Tbsp Lime Pell, finely grated
1/4 cup Cilantro, chopped (or to taste)
Directions
1 – Cut Ciabatta Loaf in half and toast until golden brown
2 – In the mean time for Spicy Aioli mix together all ingredients in a small bowl (This keeps well in the fidge for several days and also makes a great dip for veggies)
3 – Spread a generous layer of the Spicy Aioli on the bottom half of the ciabatta loaf, then layer with caramelized onions, roasted red pepper (I made mine in the Black & Decker Convection oven) and grilled chicken
4 – Top with cheese and put back into the oven to bake at 350 for about 5 minutes until cheese is melted and sandwich is heated through
5 – Top with lettuce and top of ciabatta loaf, then Enjoy!
