Food for Friday, Special Edition – Making a Great Steak
We have our ‘system’ for making steak at our house. And our system is pretty fantastic for making a delicious dinner, even on a weeknight, because it’s fast.
Our system mostly goes like this: heat a cast-iron skillet on the stove on high heat. Cook the steak for 45 seconds on each side, then top with a pat of butter, and move to a 450F oven. Keep it there for about 5 minutes for medium. Move the steak to a plate and tent with aluminum foil. Rest the steaks for another 5 minutes.
It’s a system that we’re comfortable with and it’s a system that we’re used to. And we like it. But, it just so happens that there are plenty of excellent methods and resources online for how to cook a really great steak. Here are just a few ideas:
1. A quick method (kind of like ours) from The Chow
2. Advice from all the folks at Chowhound
3. Cooking steak in the oven, directions from The Kitchn
4. A recommendation from Kitchen Konfidence on a new method that employs a ‘molecular gastronomy’ technique.
Good luck with your big dinner tomorrow and HAPPY VALENTINE’S DAY!!

We love our steaks too – we do a similar method to you – but we don't use the oven at all – I'm thinking we should try that out! Thanks for the tip.
The other thing I will say is splurge on your cut of beef! I watch for beef tenderloin to go on sale and boy does it ever make a difference!
I was just wondering how to cook a steak in the winter (we usually only have them in the summer when we can use the grill) this afternoon! Thanks!

I agree! Definitely for steak, you'll appreciate getting a good cut. We all really like a basic NY strip steak at our house, but are very careful when choosing the steak, looking for lots of nice marbling. Beef tenderloin would be great, thanks for reminding me. I've also been hearing a lot about the wonders of a good rib-eye.
Being married to a beef farmer, I've got to say that a really good steak is a good thing
Not I g worse than wasting a good steak by not cooking it properly. Tough, overcooked steak makes me sad. LOL! I' m with you on the tenting! We do that too! I'll have to try the skillet trick! Sounds like a great technique!
Ugh? That should read “nothing” and not “not I g”! Typing on the Tablet is frustrati g! LOL
Im terrible at cooking steak on the stove, we love the bbq, thanks for the tips!!
ACK! I can't believe you pan fry a steak! I love a good crosshatch BBQ steak.
A real nice Alberta beef steak is great on the BBQ!! Love em
When it comes to steak, I sit back and watch others cook it. Seems every time I try, I screw up. I am not a big red meat fan so it's rare I cook it for the Hubby… but this may encourage it a little. We don't own a BBQ so we are always researching ways to cook in the oven, but still get the BBQ taste.
The oven?!?! Why didn't I think of that. That picture looks yummy. I'll have to try this method the next time we have some good steaks to eat.
oh yum!!
Cast iron skillet? Yum! Why do I only ever think to use ours when camping? This sounds so idiot proof, definitely trying it next time steak is on the menu.
We turn the grill wayyyy up and sear on both sides, then quick cook on the grill for medium rare. When it's too snowy out comes the George Foreman grill
