Food for Friday – Dry Spice Rub for Ribs (and more!)

Apologies to everyone for this post that’s a little light on photos and a little light on words.  Luckily, what it isn’t a little light on is flavour.  As you’ve undoubtedly read, we’re currently undergoing some kitchen renovations.  We’ve been doing as best we can with what we have on hand and what we happen to have kept on hand is this spice rub.  
I was lucky enough to have the foresight to make a big pile of this stuff a few months ago.  As you can see, we’ve steadily made our way through this 2 cup jar.  I’ve practically rationed out this bit that we have left, hoping that I won’t run out before the renos are finished.  I recommend that you not do the same.  You should definitely prepare this mix up and liberally apply it to the nearest rack of ribs you can find.  
 Southern Style Spice Rub (for Pork Ribs)
Joy of Cooking, 75th Anniversary Edition
Ingredients
1/4 cup packed dark brown sugar
1/2 cup paprika (sweet or hot)
1/4 cup chili powder
2 tablespoons ground red pepper
2 tablespoons ground cumin
1 teaspoon ground mace
1/4 cup salt
1/4 cup cracked black peppercorns
Directions
Mix all of the ingredients together in a bowl.  Transfer to an air tight container and store for up to 2 months.  Double it or triple it if you really want to get some miles out of it.  Apply it liberally to some ribs and cook to tender perfection.
As you’ve more than likely guessed by now, cooked these ribs in the slow cooker.  First, I rubbed this spice mix on two racks of pork ribs as generously as I dared.  I allowed the ribs to sit in their rub overnight in the fridge and then cooked them on low for 8 hours the next day.  In the past, I’ve slow cooked them and then fired them up on the BBQ for a bit just to give some extra flavour from carmelization of the sugar.  
However, if you’ve got time and you really want to do ribs right, you should head over to Smitten Kitchen and follow her instructions precisely (incidentally, I did find this recipe in my well-used copy of Joy of Cooking but found Deb’s more detailed recipe during a bit of “Googling” about these things.  She’s great.)

    OMG! Now you made me crave ribs so badly! I would make my rub super spicy!!! My hubby usually makes the ribs on the BBQ and I slow cook mine in BBQ sauce.
