Food for Fridays – Stir Fried Rice #Recipe
Does a quick easy side dish that uses up some of the leftovers in the fridge sound too good to be true? Well it is not, I tried making Fried Rice this week and was not disappointed!
I am always looking for recipes for side dishes that are good for weeknights, and will add a little variety into our meal routine. I have been craving Chinese Food, and tried my hand at making Fried Rice for the first time. It turned out great, and I know it will become a regular addition to our meal planning. So next time you are making rice, make some extra and throw it in the fridge for the next day.
Ingredients
½ Onion, diced
1 tsp Oil – such as olive or sesame
2-3 cups Cooked Rice, Chilled (left overs are perfect!)
½ – 1 cup Veggies – I used canned corn & peas, but you can use frozen, or use leftover veggies such as carrots, bok choy, bell peppers
½ cup Meat, diced – adding meat is optional, but this is a great way to use up left over chicken, pork or beef
1-2 tbsp. Soya Sauce
Green Onions, chopped
Directions
1 – In a large frying pan cook onions (and other veggies if not precooked) in oil over medium heat until translucent
2 – Add in rice, spread over the bottom of the pan and allow to cook for 3 mins. Stir and repeat process one more time
3 – Add in Veggies & Meat if desired and cook until heated through
4 – Stir in Soya Sauce and Green onions, heat for an additional 2 mins
5 – Serve & Enjoy!

Easy and yummy! On Sunday's I always use up whatever I have leftover from the week. This is a great way to do that!
Mmmm…looks great! I really shouldn't be looking at all this food before bedtime…makes me hungry again!
Whirlwind of Surprises
If you want to make it egg-fried, stick an egg or two in to fry at the same time as the onions, and once it's basically cooked just scramble it with the edge of your spatula, and stir into the rest of the ingredients
