Our system mostly goes like this: heat a cast-iron skillet on the stove on high heat. Cook the steak for 45 seconds on each side, then top with a pat of butter, and move to a 450F oven. Keep it there for about 5 minutes for medium. Move the steak to a plate and tent with aluminum foil. Rest the steaks for another 5 minutes.
It’s a system that we’re comfortable with and it’s a system that we’re used to. And we like it. But, it just so happens that there are plenty of excellent methods and resources online for how to cook a really great steak. Here are just a few ideas:
