When is the last time you went out for lunch with a friend? It seems like we never do it often enough, or when we do we are rushed and there are lots of distractions (like the kids!) When offered the opportunity to try out the new Wendy’s Salad collection with a friend I jumped at the chance and knew who I would take right away – my Mom. These days I rarely get to see my mom to just have some “girl time” as when we visit the boys are always with me, as they love to see their Grandma too. But there is something special about just being able to sit and talk with your mom over a meal that you just can’t get over the phone.
We headed out for lunch, grabbed our salads and started chatting. We covered everything from the unique finds at the One of a Kind show that Mom bought to where my little sister is going to go to University. Of course we talked about my boys, but it was great getting out for a lunch date where they were not the main focus. We definitely need to get out for “Ladies who Lunch” more often!
It was wonderful to have so many options to pick from at Wendy’s for our lunch date. Wendy’s first brought the salad bar to quick service restaurants more than 30 years ago. Now they have expanded their offerings to include 3 tasty new options: Asian Cashew Chicken, BBQ Ranch Chicken and Taco Supremo Salads. These great new flavor combinations are prepared fresh daily in store, even the romaine and iceberg lettuce, tomatoes, cucumbers and red peppers are sliced and chopped by hand in the restaurant. And these salads offer 50% less fat, 29% less sodium and 61% less saturated fat. Best of all they are topped with warm chicken or chili right when you order them.
I love that the salads were available in both half and full sized portions – for me the half size was more than enough for a filling lunch. I am extremely picky about the chicken I eat while out, I don’t like any dark meat or chewy bits. The 100% premium all while grilled chicken breast was the perfect topping for the salads – flavourful moist chicken perfectly with not a dark spot to be seen.
So what salads did we try? Mom had the Asian Cashew Chicken Salad. Filled with 11 different kinds of greens, fire roasted edamame, red peppers and cucumbers topped with a Asian Chili Vinaigrette this salad is the perfect nutritious lunch at only 370 calories. Think mom liked it? This is her bowl at the end of our lunch!
I decided to try out the Wendy’s BBQ Ranch Chicken Salad and I was impressed! There was just the right blend of BBQ flavours combined with the fresh crispness of the lettuce, tomatoes and my favourite part the fire roasted corn. The BBQ Ranch dressing, made with real buttermilk, parmesan cheese, ancho chili peppers, honey and brown sugar, added just a touch of creaminess and sweetness to the salad. This salad was a delicious lunch that kept me full all afternoon long.
