Line a 8” square pan with foil, to make it easy to remove the fudge once it is done
Microwave dark chocolate and 2/3 cup of condensed milk on medium power, stirring every 30 seconds until melted.
Add in chopped cookies and vanilla. Mix well and spread onto the bottom of the pan
In a separate bowl microwave white chocolate and the remaining condensed milk on medium power, stirring every 20 seconds until melted.
To the white chocolate mixture add in 5 drops of green food colouring and mint extract. Mix well and spread over the bottom layer in the pan.
Sprinkle crushed candy canes over the top, and refrigerate for at least 2 hours before cutting.
